Miso Ramen
The most consumed noodles dish in Japan
Ingredients for 2 bowls
200g wheat noodles
200g pork (pork belly, loin or filet mignon)
100g ground pork
2 tbsp vegetable oil
15g ginger
3 garlic cloves
1 onion
1 tbsp sesame seeds
1 tsp chili puree
2 tbsp Miso paste
Ground pepper
2 tbsp soy sauce
1 tbsp cooking sake
1 tbsp sugar
1 egg
100g bean sprouts
2 seaweed sheets (for sushi rolls)
A small piece of leek
3 spring onion
Japanese chili powder shichimi togarashi (optional)
Broth
500g pork bones
20g seaweed (kelp)
15g ginger
4 cloves of garlic
½ leek
1 onion
1 tsp salt
2L water
