Choy-Sum

A delicious green vegetable

Choy-sum (菜心)is sometimes also named Chinese flowering cabbage. Its leaves and the stems that carry them are tender, but the central stalk is thicker and its hard skin must be peeled. This vegetable is delicious and can be used in many ways: quickly blanched, steamed, sautéed or in soups. Bon appétit.
