Thai Rice Noodle Clear Pork Soup
Made with a three-hour broth
Ingredients for 4 people
500g thin rice noodles (1mm)
200g pork loin
2 pork belly slices
200g fish balls
40g garlic cloves
1 tbsp vegetable oil
2 × ¼ tsp salt
Ground pepper
150g bean sprouts
2 green onion
10g cilantro
A few pinches of Tianjin preserved cabbage (optional)
Broth
1kg pork bones
3L water
1 tbsp + 1 tsp salt
2 tbsp fish sauce
7g coriander seeds
7g peppercorns
1 onion
1 head of garlic
2 heads of pickled garlic
5cl pickled garlic juice
80g black or white radish
15g rock or white sugar
