Rice Noodle Soup with Pork, Red Curry and Coconut Milk

Ingredients for 4 to 5 people

  • 400g dehydrated rice noodles
  • 1.5L meat broth
  • 50cl coconut milk
  • 500g ground pork
  • 100g homemade red curry paste
  • 5 kaffir lime leaves
  • 1 lemongrass
  • 10g galangal
  • ½ tsp salt
  • 1 tbsp sugar
  • 4 tbsp fish sauce
  • 2 tbsp salted soy beans
  • 3 eggs
  • 2 cabbage leaves
  • 1 carrot
  • 100g green beans
  • 100g bean sprouts
  • 5 ngo gai leaves
  • 4 mint sprigs
  • 5g cilantro
  • 2 spring onions
  • 2 tbsp vegetable oil
