Crispy Pork Belly in the Peking Way

To enjoy wrapped in the traditional pancakes with vegetables



Ingredients for 4 people

  • 1kg pork belly
  • 1 tsp five-spice powder
  • ½ tsp ground pepper
  • 1 tbsp Shaoxing cooking wine
  • 2 x 1/4 tsp salt
  • ½ tbsp white rice vinegar
  • 1.5 kg coarse salt
  • 3 egg whites
  • 400g wheat flour
  • 32cl boiling water
  • 50g spring onion
  • A small piece of leek
  • ½ cucumber
  • Hoisin sauce
  • Sesame oil
