Ingredients for 4 people
1kg pork belly
1 tsp five-spice powder
½ tsp ground pepper
1 tbsp Shaoxing cooking wine
2 x 1/4 tsp salt
½ tbsp white rice vinegar
1.5 kg coarse salt
3 egg whites
400g wheat flour
32cl boiling water
50g spring onion
A small piece of leek
½ cucumber
Hoisin sauce
Sesame oil
