Lao Sausage
ໃສ້ກອກ - Say Kor Lao

A must in the Laos cuisine

Two kinds of sausages are very popular in Laos: the 'Houa Som' sausage which contains glutinous rice and which is dried before frying and this one called 'Say Kor Lao'. You will often find this version in receptions organized by Laotians.

Its taste comes mainly from the lemongrass and from the kaffir lime leaves. For this sausage's enthusiasts, the pork rind is an essential ingredient, it gives the sausage a texture less compact and more elastic.

For cooking, use the stove, oven, steam, frying or BBQ. Before serving, do like in Laos: cut the sausages into sections. Enjoy, they are easy to make and to succeed. Bon appétit.

Ingredients for 2kg of sausage

  • 2kg pork shoulder or belly
  • Casing for sausage
  • 2 tbsp homemade red curry paste
  • 20 kaffir lime leaves
  • 5 lemongrass
  • 200g shallots
  • 1 tbsp sweet chilli powder
  • 3 hot chilies (optional)
  • 30g salt
  • 1 tsp sugar
  • 1 tbsp fish sauce
