Vegetable Spring Rolls
At least as good as those with meat
Ingredients for 30 spring rolls
30 rice papers (diameter 18cm)
100g firm tofu
250g fresh or frozen taro
100g bean sprouts
50g glass noodles
15g black fungus
100g carrots
1 big onion
2 eggs
1 tsp salt
½ tsp ground pepper
3 tbsp light soy sauce
Frying oil
