Vegetable Spring Rolls

At least as good as those with meat



Ingredients for 30 spring rolls

  • 30 rice papers (diameter 18cm)
  • 100g firm tofu
  • 250g fresh or frozen taro
  • 100g bean sprouts
  • 50g glass noodles
  • 15g black fungus
  • 100g carrots
  • 1 big onion
  • 2 eggs
  • 1 tsp salt
  • ½ tsp ground pepper
  • 3 tbsp light soy sauce
  • Frying oil
