Prik Pao - น้ำพริกเผา - Thai Chili Paste

Learn how to make this essential Thai base

This recipe is my version of PRIK PAO which is full of flavors and not too hot. I use the red dried peppers, they are that very fragrant.

This paste is essential to make the Tom Yam Kung soup, or the salads called 'Yam', also the duck with green pepper 'pad ped bai kra prao' ...

It is always useful to have a pot at home, you can keep it well for several months in the fridge.

Ingredients: dose for about ten recipes

  • 50g dried red peppers
  • 250g shallots
  • ½ head of garlic
  • 60g dried shrimp
  • 20g galangal
  • 1 tsp shrimp paste
  • 50g palm sugar
  • 100g tamarind paste
  • 5 tbsp fish sauce
  • ½ tsp salt
  • 500ml vegetable oil
